Pistis Sophia is a text, a gnostic gospel that has mystical-philosophical influences and is written in Coptic language, an evolution of the ancient Egyptian. This name was chosen for two main reasons: the first is the meaning of the greek words Pistis and Sophia (Faith and Knowledge), two concepts that describe the way we work; the second one relates to the last part of the text in which Jesus meets Pistis Sophia.

From an intellectual point of view, Pistis Sophia represents the moment of Creation in which the human soul, fallen into the chaos of the matter, finds its way back to the ineffable God. Pistis Sophia is basically the representation of the human being: from creation to salvation through the falling.

Pistis Sophia excludes any manipulation that could force, accelerate or slow down the natural fermentation processes of both must and wine, firmly avoid any type of clarification or filtering action that could alter the organic and natural balance of their wines and avoid any type of external addings (such as vitamins, enzymes and bacteria).

On top of that, we only use indigenous yeasts naturally found in the grapes and a total amount of sulfur dioxide that will never exceed 20mg per liter.
